Take 1/2 a Cup of Social Distancing, One cup of Isolation and another cup of the threat of the world collapsing.  Add a pinch of salt(iness) and you’ve got a v stressful situation on your hands there girl! 

If theres one way that us PM gals know how to combat anxiety and exhaustion over COVID-19, thats with food!  With restaurants and cafes on their way to total shutdown what better time to release the inner Chef Gordon Ramsay thats been hiding inside of you and let off some steam with baking! 

Feeling my vibe? Then enjoy these distracting and delicious dessert recipes that you can whip up in no time! (Not that you’re really pushed for time these days lol, but when that craving hits you want your fix fast!) 

 

BANANA BREAD

First up is the humble Banana Bread. Has anyone else noticed its recent rise to fame on insta? It seems bloody everyone in the world is having a go at baking it. Well I’m defs one to jump on the band wagon so here you go - A super simple, not so healthy Banana Bread Recipe. That’s also Vegan - you can feel like you’ve done a good deed for the day!

What do bananas say when they answer the phone?

“Yellow”.

INGREDIENTS :

  • 3 medium overripe bananas

  • 1/3 cup organic granulated sugar

  • 1/3 cup organic brown sugar

  • 1/3 cup canola oil (or your favourite baking oil)

  • 2 teaspoons vanilla extract

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1 teaspoon salt

  • 1 cup chopped walnuts

Drool.

Drool.

METHOD:

  • Preheat the oven to 180° C

  • Lightly oil a loaf pan and arrange a strip of baking paper, with just a bit hanging out over each side.

  • Peel the bananas and place them into a large mixing bowl.

  • Mash them well with a fork or potato masher, or your face whatever your vibe rn.

  • Add sugar, brown sugar, oil, and vanilla to the bowl.

  • Stir until well-mixed.

  • Add the flour to the bowl, then sprinkle the baking soda, cinnamon and salt on top of the flour.

  • Stir everything together just until mixed. Don't over mix with all that built up tension or the batter will be way too thick.

  • Fold/ Chuck in the walnuts.

  • Spoon the batter into the prepared pan and smooth out the top with the back of a spoon.

  • Sprinkle the top with brown sugar.

  • Bake for 50 minutes, or until a toothpick inserted into the center comes out clean. (While your at it, clean those teeth it’s been a while)

  • Remove the pan from the oven and transfer it to a cooling rack. Allow the loaf to cool for at least 15 minutes before removing it from the pan.

  • Slice and serve. (Or just eat straight from the container with a fork like you know you were going too!)

 

SLUTTY BROWNIES

Clearly these caught my attention and immediately made the cut. The best dream you’ve ever had and a heart attack all rolled up into one delicious mouthful. The name suits because they are oh so easy, and a little bit too naughty.

Oreos, Brownies & Cookie Dough - Need I say more?!

INGREDIENTS:

  • Favourite Brownie Mix

  • Favourite Cookie Dough mix (“Aunty Kaths” - Always)

  • Packet of Oreos

You could go all Martha Stewart on us and make your own Brownie and Cookie mixtures - but ain’t nobody got time for dat over here!

METHOD:

  • Preheat Oven to 180° C

  • Follow Brownie & Cookie Dough Packet Instructions up until they are mixed and ready for the oven

  • Grab a pan and layer in the mixed cookie dough on the bottom

  • Layer as many oreos as you can fit on that bitch!

  • Pour that brownie goodness all over the top, and make sure it is an even as a boss set of brows

  • Bake for 30-40 minutes, peeping in the oven ever so often to get that sweet scent

  • Allow to cool for 5 minutes, then grab some ice cream and make up that big bowl of slutty goodness you deserve!

NUTELLA CHOCOLATE CRACKLES

Who woulda’ thought those childhood gems could get anymore delicious? Well yep we just did a thing and added NUTELLA! Droooool.

Bring back the good old days and reminisce on the days when you could play with your friends in the park and ride your bike around the block like a boss. ( And the days when all these calories didn’t count!)

INGREDIENTS:

  • 3/4 Cup of butter

  • 12 Cups of Rice Bubbles / Puffed Rice Cereal

  • 1/2 Cup powdered Sugar

  • 2 Bags of Mini Marshmallows

  • 1 3/4 Cups of Nutella

  • 1 Teaspoon of salt (Cause we’re adults now and love our salt)

METHOD:

  • Line a tray with baking paper

  • Melt the butter in a large pot, over medium heat - stir until it starts to foam

  • Add the salty salt and marshymallows, reduce the heat and stir constantly till your arm falls off - or until they are all melted into one

  • Remove from the heat and add half of the Rice Bubbles, fold until the mixture is combined * Let me just add this is a workout in itself - so defs skip arm day this week babe!

  • Add remaining cereal and pour into the pan.

  • Let it cool slighty, press down firmly to make an even and compact layer

  • Cover for 2 hours to let set

  • If you made it that long without stuffing your face yet, its time to cut and serve! Enjoy

PEANUT BUTTER FUDGE

PEANUT. BUTTER. FUDGE, PEOPLE!

5 ingredients and surprisingly healthy, It might just make you want to go for some laps around the living room. Packed with protein, you are practically an athlete now!

INGREDIENTS:

  • 2 Cups desiccated/ shredded coconut

  • 1 Cup creamy Peanut Butter (Stick to “Mayvers” Brand for a bit of health you filthy animal)

  • 1/2 Cup of melted coconut oil

  • 3-5 Tablespoons of maple syrup (Defs go for the 5)

  • 1 Teaspoon of Vanilla Extract / Sea Salt (Optional)

METHOD:

  • Line a pan with baking paper (If you haven’t run out yet after all these recipes)

  • Add desiccated coconut to a food processor/ blender /super speedy arm and blend until a butter is formed

  • Add peanut butter and coconut oil and mix again

  • Add the maple syrup in one teaspoon at a time, or all in one go if you’re feeling rebellious

  • Add Vanilla Extract and/or Sea Salt depending on your vibe

  • Transfer the mixture into your prepped pan, and spread into an even layer

  • Freeze it up until firm then use a hot knife to slice it into bite size pieces. (In half, just cut it in half and dive right in)

Why not squeeze in some retail therapy while your at it, because we both know you’re gonna need your stretchy pants for this feast!
